Hainanese Chicken Rice

Hainanese Chicken Rice is very popular in Singapore. You can’t go to this country without trying this dish. It’s so popular that is considering as one of the national dishes in Singapore. In other countries like Brunei, Malaysia, and Indonesia you can find it in big cities. I think in south east asian style is more interesting because we like to put some other herbs that normally aren’t use in China.

I have made Hainanese Chicken Rice countless time and I really like this recipe and it’s super easy.  If you have chicken soup/stock on hand, it takes only 15-20 minutes. If you have a ricecooker, it’s even easier.

List of the ingredients:

2 Cups of good quality of Rice, I use Jasmine if you have Pandan rice would be better.

2-2.5 Cups of Chicken Stock (I made by myself, I will write for the next recipe and will link it too).

1/2 Tsp of Ginger Powder.

1/2 Tsp of Galangal Powder, if you can’t find it just skip it.

1/2 Tbsp of Chicken Bouillon.

1/2 Tbsp of Garlic Powder.

2 Lemongrass Stalks, cut into 5 cm long and pound with a pestle.

1 Pandan leave, if you can get it skip it.

Salt, to taste (I don’t put any).

P.S. My family and I don’t really consume a lot of sugar or salt. Most of my recipes have very little of salt. I don’t put salt here, neither in my soup nor in my rice. There is a little salt in the bouillon. You can put a little bit of salt, we just don’t need it.

How to cook the rice:

  1. Put your rice in a pot and clean it with water. Rub it with your hands. Make sure you clean the starch away. In Asian cooking, it is very important to wash the rice.
  2. Add in the chicken stock, ginger powder, galangal powder, chicken bouillon, garlic powder and stir well. If you want salt, you should add it in now and stir well too.
  3. Put in the pounded lemongrass stalks and pandan leave.
  4. Turn on stove heat into high.
  5. Cook until it boils and turn into low heat. You need the steam to cook the rice.
  6. I like to cook rice in low heat but in longer time. The rice is evenly cooked and it tastes better. I cook it about 20-25 minutes.
  7. Done! I serve it with the chicken from my chicken soup, some cucumbers and red bell pepper dices. Enjoy 💓

Cauliflower Rice with Harissa Chicken

Ingredients:

* 300 gr chicken breast (ca. 10 oz)

* 1-2 tbsp of Harissa seasoning, depending on how spicy you want it.

* 150 gr Skyr (if you don’t have it, you can substitute it with plain yoghurt or sour cream). Skyr is Icelandic Cheese but always considered as yoghurt, which is very low fat, high protein and very creamy.

*1/2 of lemon (take the juice)

* 1/4 of a chopped cauliflower (you can also buy frozen one)

* 2 carrots (diced)

* 1 small bowl of peas (150 gr or 6 oz)

If you love to eat rice, but for some reason you can’t eat it, Cauliflower rice is a perfect substitute. Honestly, I like it better than broccoli rice. Cauliflowers have a very mild and plain flavor, yet very tasty.

I cook a lot with cauliflowers and this is one of the recipes that I’d love to share.

If you’re on keto diet, this is perfect for you!

I use skyr for the sauce. If you don’t have it or can’t find it, substitute it with plain yoghurt or with sour cream.

Italian Seasoning Fried Chicken

This Italian Seasoning Fried Chicken will make you addicted. I have made it many times and in different ways and I think this one is the best one.

Nick and Mack just love it. Especially Mack, she won’t stop digging in. Very easy and you don’t need a lot of herbs.

Ingredients:

400 gr (14 oz) of skinless chicken breast, cut into thin stripes.

4-5 Tbsp of Skyr or Yoghurt

1/2 Tsp of Salt

1/2 Tsp of Pepper

1 Tsp of Garlic Powder

1/2 Tsp of Ginger Powder

1/2 Tbsp of dried Oregano

1/2 Tbsp of dried Thyme

*** Marinate all the ingredients with the chicken together ***

I always marinate overnight, if you can’t do that, wait at least for an hour.

For the flour mixture, you’ll need:

180 gr (1 1/2 cups) of all purpose flour.

1 Tbsp of rice flour (optional).

1/2 Tsp of Baking Powder.

1/2 Tsp of Salt.

1/2 Tsp of Pepper.

1/2 Tsp of Garlic Powder.

1 Tbsp of dried Oregano.

1 Tbsp of dried Thyme.

1 Tsp of smoked Paprika.

1/2 Tsp of Chili Flakes (optional).

*** Mix all the ingredients in a big bowl, so it is easy for you to dip the chicken in the flour mixture ***

Juice of a Lemon

A drizzle of Honey

Some chopped Parsley

Instructions:

• Put some oil in your frying pot or frying pan (depending on which one you like better).

• Turn on your burner/stove to medium heat.

• Dip in a wood skewer or a chopstick in your pot, if you see little bubbles, it means the oil is hot enough.

• Dip your chicken your flour mixture both sides.

• Fry your chicken fillets until golden brown or cooked.

• Place them in a plate.

• Drizzle some lemon juice, honey and chopped parsley.

• It’s ready to be served. I love to serve my chicken with chopped tomatoes with chilli flakes and some diced cucumbers.

Rice Wine Chicken Barbecue

We got a bottle of great rice wine from our good friend in Taipei, Taiwan years ago. And it had been sitting in my kitchen for years, so I decided to make something yummy with it. If you have good rice wine, it will give you this great taste in your food. It is really good with meat like pork and chicken or even fish.

I wanted something delicious but easy, so I just roasted my chicken in the oven for about 40 minutes with extra 10 minutes for the crispy skin. The reason why I kept the skin on; the skin protected the meat from drying out. It took only 10-15 minutes to prepare it and after 50 minutes, you’d have this delicious, healthy and low-carbs meal.

It is perfect for people who have gluten problem. You just have to get the gluten-free soy sauce. And for the sweet soy sauce, if you can’t find one, just add some honey in it.

For vegetarian or vegan eaters, you can substitute the chicken breasts with tofu (please not Japanese soft tofu).
If you don’t have rice wine, skip it. Please don’t substitute it with white wine, it won’t taste the same.
Shao Xing wine is NOT rice wine.

Ingredients:
500 gr of chicken breasts (17 oz)
2 tbsp of sweet soy sauce (if you don’t have it, just add some honey, but put 2 more tbsp of soy sauce)
4-5 tbsp of soy sauce
2 tbsp of rice wine
5 tbsp of olive oil (put more if you use tofu)
Garlic powder and white pepper, to taste
Salt, to taste (for the vegetables)
Some greens (any kind you want)
Parsley, chopped (optional)
